With summer coming to an end and the tomato harvest about to be complete for another season, I decided to give you some inspiration on what to do with the last of your tomatoes.
Summer is my favorite season for so many reasons, but I especially love the fresh produce that I plant, grow and buy. Tomatoes are one of my favorites. Not only do they burst with flavor and can be used in so many recipes, they also come with lots of health benefits. Tomatoes red pigment contains lycopene, which acts as an antioxidant. This antioxidant helps neutralize cell-damaging toxins that can cause damage in your body. Research has shown that lycopene helps lower the risk of developing stomach, colon or rectal cancers, reduces the risk of heart disease and can prevents cataracts. Tomatoes are also very high in vitamin C, and have a healthy dose of vitamin A. Adding tomatoes to a variety of other healthy fruits and vegetables is a great way to enhance your health.
