Serves 2 Meal Size and 4 Starters
Full of flavour and oh so delicious and healthy! Eating healthy doesn’t have to be boring and tasteless, but don’t take my word for it, make it and taste it for yourself.
1 large carrot, roughly chopped
1 large sweet potatoes, cubed
2 large red, cored, peeled and chopped
1 small onions, chopped
1 cup white cooking wine
3 cups water
1 teaspoon each of ground ginger, curry powder, garlic powder, and cinnamon
Pinch of nutmeg (or to taste)
½ teaspoon celery salt
Black pepper, to taste
In a large soup pot, bring the wine to a boil. Add the sweet potato, carrots, onion, red apple, and all of the spices. Stir well to combine. Cook for 2-3 minutes to release the flavors of the spices and soften the vegetables, stirring frequently.
Add the water and bring to a boil. Gently simmer until all of the vegetables have softened.
With a handheld blender or food processor, puree the mixture. I like to leave it a bit chunky which adds a nice texture to the soup.
