This salad will serve 2 as a main course or 4 as a side dish.
4 cups roughly chopped kale
1 cup cubed cucumber
1 red bell pepper, thinly sliced
½ cup thinly sliced radishes
1 cup roughly chopped purple cabbage
1 cup thinly sliced red onion
Large handful of fresh cilantro
1 teaspoon raw honey
Juice of 1 lime
1 cup extra-virgin olive oil
½ cup apple cider vinegar
Black pepper to taste
Place all vinaigrette ingredients into a blender and blend until smooth. Set aside while you prepare the salad.
In a large bowl, toss together all salad ingredients and mix with vinaigrette.
