This recipe is good with any fish and you can also substitute the fish for chicken or turkey. You can use any vegetables that are your favourite or in season.
3 tablespoons extra-virgin olive oil
1 small red onion, thinly sliced
2 cloves of garlic, chopped
1 large carrot, cut into matchsticks
1 cup snow peas or green beans
1 cup red potatoes, thinly sliced
1 small pint cherry tomatoes (or two large tomatoes, quartered)
4 halibut steaks (or any white fish)
¼ cup dry white cooking wine or apple cider vinegar (optional)
Handful of fresh basil, chopped
Preheat oven to 400 F degrees.
Add all the vegetables into a large ovenproof dish and toss with olive oil, white wine, basil, and season with sea salt and pepper. Place fish on top of vegetables and cover dish. If your pan doesn’t have a lid, cover it with tinfoil.
Place in oven and bake for 25 to 30 minutes, or until vegetables are tender and fish is cooked through.
