This Italian girl loves Mexican food. The fresh flavors of cilantro, Pico di Gallo, salsa and guacamole. The spicy zing of hot sauces, enchilada sauce, Mexican spices, and Jalapeno’s. And let’s not forget the rice, sizzling vegetables, tortillas, wraps and refried beans. When I started my health journey, it was important for me to not only get healthy, but also continue to enjoy the foods that I had grown to love. I also wanted to make sure that my clients had good tasting food, so they would feel like changing their dietary habits was a lifestyle, not a diet and not restrictive. Mexican food was on that list, and unfortunately, a lot of the recipes are usually loaded with fatty cheeses, tons of sodium (usually twice as much as your daily-recommended allowance), artificial flavors and unhealthy fats. All this makes a delicious combo for the taste buds, but not so great for our hips and ass if we are trying to maintain our weight and get healthy. I’m not saying that you can’t have the occasional dinner out at your favorite Mexican restaurant, but I wanted more than the occasional treat, I wanted to make it healthy, so I could enjoy all these amazing flavors more often. I started experimenting with my favorite dishes and worked at making them healthy, and still delicious. I’m going to toot my own horn and say, I think I nailed it!
