Who doesn’t like a soulful Italian meal? You might love rolling spaghetti into the perfect bite, or biting into a tomato that bursts with juicy sweetness, and who can forget the garlic and olive oil. Here, in North America, we seem to think that cream sauce, battered fried meat, three cheese blends and processed noodles make an Italian meal. As tasty as all that sounds, it is extremely heavy and does not help us manage our waistline. Italian food can be delicious and healthy, which I learned first hand on what turned out to be a foodie’s dream vacation to Rome, Venice and Florence. Everything is fresh, with lots of flavorful tomato sauces, grilled meats, vegetables to die for, and homemade pasta. It is real made from Mother Earth that fills up your belly and of course your soul.
