I can’t say enough about this recipe. It is so delicious! I made this for my husband and kept asking me to make it again. A true sign that something is tasty.
1 large pear, cut into 8 thin slices
3 tablespoons coconut oil
1 10-oz package of goat cheese (approximately 1 cup)
4 slices wholegrain bread
In large frying pan, over medium-high heat, add 2 tablespoons of coconut oil. When oil is melted, evenly spread out pear slices and sauté in oil until pears become tender and golden brown. Remove from pan and set aside. Keep pan hot while you prepare the sandwiches.
Spread goat onto each piece of bread. Place 4 pears slices on 2 slices of bread and top each with remaining bread to make a sandwich.
Add 1 tablespoon of oil into pan and when oil has melted place sandwiches into pan and flatten with a spatula. Flip sandwiches when it becomes toasted to a nice golden brown, flip, and repeat with the other side.
