Get Your Sweet On!
I get lots of requests from my clients about healthy snack ideas. Especially for snacks that can replace their after dinner ice cream indulgence. Instead of replacing it with something different, I decided to try and create a recipe that tastes and feels like ice cream, but is full of healthy goodness. It is so delicious and incredibly quick and easy to make. If breaking up with sugar is on your healthy living to-do list, this is a great recipe to honour your sweet tooth needs, but not sacrificing your health.
2 large ripe bananas
3 heaping tablespoons almond butter
1 tablespoon pure vanilla extract
2 tablespoons unsweetened cocoa nibs
Cut bananas into 1” thick pieces. Place in bowl and place bowl in freezer until frozen solid.
Add frozen banana to a food processor and puree on low until smooth. Add almond butter and vanilla extract and puree until creamy like ice cream.
Place mixture into a freezer friendly container; fold in cocoa nibs, cover, and place in freezer until frozen and ready to serve.
