3 tablespoons apple cider vinegar
1 tablespoon raw honey
1 mango, peeled and diced
¼ cup radishes, thinly sliced
1 celery rib, roughly chopped
¼ cup red onion, chopped
3 tablespoons fresh cilantro, chopped
Juice of 1 lime
1 tablespoon mayonnaise, vegannaise or plain yogurt
2 Avocados, chopped
1 teaspoon ground cumin
2 Whole Grain Tortillas
Iceberg lettuce, for wraps
In a small pot, add honey, vinegar and a couple splashes of water. Heat over high heat until fully combined. Remove from the heat and set aside to cool.
In a large mixing bowl, add the mangoes, avocado, celery, red onion, radishes, cilantro, lime juice, cumin, and mayonnaise. Stir until combined.
On each tortilla, place lettuce leaves on entire surface. Pile the salad in the center of the lettuce leaves, and wrap together to enclose the salad.
