Slow Cooker Vegetable Soup

Vegetable Soup

Serves 6-8


Ingredients

1 medium onion, chopped

2 cups cauliflower, cut into bite sized pieces

2 cups carrots, chopped

2 cups celery, chopped

2 cups broccoli, cut into bite sized pieces

3 cups cabbage, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon turmeric

1 teaspoon nutmeg

1 ½ teaspoons onion powder

1 ½ teaspoons garlic powder

¼ cup apple cider vinegar

2 bay leaves

5 cups water

1 398ml can low sodium kidney beans

2 tablespoons tomato paste (optional)

Freshly ground black pepper to taste


Directions

Place all ingredients into slow cooker and stir. Cook on high for 4 to 5 hours.
