Three Recipes To Spice Up Your Rice

I rounded up some of my favourite rice recipes for you because three recipes are so much better than one and healthy eating does help us unleash our inner contagiously positive.

I get bored easily with eating the same thing over and over again and I don’t like bland food. If this is true for you as well, or you just want some new tasty rice side dishes to spice up your meals, here are three of my favourites. Just scroll on down and start cooking.


Three Recipes To Spice Up Your Rice copy 2

MEXICAN RICE

Serves 4

 

Ingredients

1½ cups rice

2 cups water

1 cup canned diced tomato, with juices

1 clove of garlic, minced

1 tablespoon chili powder

1 teaspoon ground coriander

1 teaspoon sea salt

See cooking note below for optional ingredients

 

Directions

In a large sauté pan, that has a lid, add the water, garlic, seasonings and diced tomato. Bring to a boil over high heat. Once it comes to a boil, add the rice, stir to combine, and bring back to a boil. Reduce heat to medium-low, cover and let simmer for approximately 20 to 25 minutes.

 

Optional Additions: You can also add ½ cup diced onion and 1 small green pepper, diced. Cook the onion and pepper in extra-virgin olive oil for 2 minutes and following directions above.


Three Recipes To Spice Up Your Rice copy

CILANTRO RICE

Serves 4

 

Ingredients

1 cup long-grain brown rice

2 cups water

1 large handful of fresh cilantro, roughly chopped

1 tablespoon extra-virgin olive oil

 

Directions

In a medium pot, over high heat, add all of the ingredients. Bring to a boil, stir, cover, and reduce heat to low. Cook for approximately 20 minutes, or until rice is tender.


Three Recipes To Spice Up Your Rice

TOMATO RICE

Serves 4

 

Ingredients

1½ cups long-grain brown rice

2 cups canned diced tomato, with juices

1½ cups water

2 carrots, chopped

2 celery stalks, chopped

1 clove of garlic, minced

1 tablespoon coconut oil

Pinch of black pepper, or to taste

 

Directions

Heat oil in a medium pot, over medium-high heat. Stir in the carrots, celery and garlic; cooking for approximately 5 minutes to tenderize the carrots. Stir in the spices and rice and cook for 1 minute to release the flavors. Add the water and canned tomatoes, brining it to a boil. Reduce heat to medium-low, cover and let simmer until rice is cooked, approximately 30 minutes.
