Spicy Tomato Gnocchi

Sometimes we just need comfort food – bad days, emotional rollercoaster weeks, whatever it may be, we just have to eat something that gives us emotional comfort when we take the bite. Here is a recipe that you don’t want to eat every single day, but it is so fresh and made with all natural ingredients that it will satisfy your emotional craving without the added guilt sprinkled in at the end. Healthy Living should never deprive you from good tasting food.

Serves 6

 

Ingredients

4 tablespoons extra-virgin olive oil

2 cloves of garlic, minced

1 teaspoon chili flakes (add more if you like it spicy)

2 cups dry white wine

2 cups low-sodium vegetable broth (Organic chicken broth works too)

2 28-ounce cans diced tomatoes

2 tablespoons coconut oil

1/3 cup freshly grated Parmesan cheese

2 packages whole wheat gnocchi, cooked according to package directions

Handful of fresh basil, chopped

Black pepper, to taste

 

Directions

In a large saucepan, sauté olive oil, garlic and chili flakes on medium heat for about 2 minutes. Add the white wine and vegetable broth, bringing to a boil, and simmering for 10 minutes, until liquid has reduced by half. Add the tomatoes and continue to simmer, on medium-low, for 15 to 20 minutes. Season with black pepper to your liking.

 

Carefully ladle half of the sauce into a blender with the coconut oil, and Parmesan cheese. Blend until smooth. Remove sauce from blender and stir back into the pan with other half of sauce that was not blended.

 

Remove the gnocchi from boiling water, drain and stir into the sauce until fully coated and mixed together.

 

Add to serving bowls and top with basil.

 

Vegan Swap Option: Parmesan cheese can be replaced with vegan Parmesan, found at most local health food stores.
