Yields 20 small meatballs
When it comes to feeling healthy, cooking should not be optional. If you are eating foods made from Mother Earth, instead of “foods” made in a laboratory, you will feel energized, healthy and vibrant.
1 pound organic lean ground chicken or turkey
¼ cup almond flour (or unbleached flour)
1 tablespoon almond milk (or milk of choice)
1 egg, lightly beaten
1 clove of garlic, minced
Handful of fresh basil, chopped (Leave a little extra to sprinkle on top before serving)
Pinch of sea salt
Black pepper, to taste
1 14-ounce can whole tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 clove of garlic
Preheat oven to 400 degrees F.
In a large bowl, with your hands or a wooden spoon, mix together all the meatball ingredients and form 18 to 20 mini meatballs. Place the meatballs in a deep, ovenproof baking dish. Mix together all the ingredients for the sauce. Pour sauce over meatballs and bake in the oven for 20 to 25 minutes, or until meatballs are cooked through. Transfer to a serving dish, and sprinkle with fresh basil.
One of the things I love about my Healthy Living Course is that the recipes are filling and delicious just like this one. I really just took my own personal faves and made them healthy. I took out processing, chemical-filled packaged, unhealthy ingredients and make everything from Mother Nature grown foods. Now I know that that’s not always going to happen, but it should be the norm. Cooking should not be optional when it comes to living a healthy lifestyle. Especially if you want to get off the diet roller coaster, boost your immunity, feel energized and be productive. head on over the our website to learn all the details – registration is open.
