Chicken Meatballs

Yields 20 small meatballs

 

When it comes to feeling healthy, cooking should not be optional. If you are eating foods made from Mother Earth, instead of “foods” made in a laboratory, you will feel energized, healthy and vibrant.

 

Meatball Ingredients

1 pound organic lean ground chicken or turkey

¼ cup almond flour (or unbleached flour)

1 tablespoon almond milk (or milk of choice)

1 egg, lightly beaten

1 clove of garlic, minced

Handful of fresh basil, chopped (Leave a little extra to sprinkle on top before serving)

Pinch of sea salt

Black pepper, to taste

 

Sauce Ingredients

1 14-ounce can whole tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried thyme

1 clove of garlic

 

Directions

Preheat oven to 400 degrees F.

 

In a large bowl, with your hands or a wooden spoon, mix together all the meatball ingredients and form 18 to 20 mini meatballs. Place the meatballs in a deep, ovenproof baking dish. Mix together all the ingredients for the sauce. Pour sauce over meatballs and bake in the oven for 20 to 25 minutes, or until meatballs are cooked through. Transfer to a serving dish, and sprinkle with fresh basil.

I took out processing, chemical-filled packaged, unhealthy ingredients and make everything from Mother Nature grown foods.
